It’s here and I can’t wait because any time that I get to pretend I am meeting my H20 requirement, but really I am just eating fruit, is a time in life that I enjoy.
ESPECIALLY when you add a little “Adult juice” to that “drinking my H20” like we’re doing in this mojito.
I mean, I like a good watermelon smoothie and all…but I much prefer my watermelon in mojito form.

How to make Simple Syrup
Making simple syrup at home is actually super easy and fast to whip up, too. All you’ll need to do is combine ½ cup of water and ½ cup of sugar in a small saucepan and heat it over medium heat, stirring often. Once the sugar dissolves, remove it from heat and store the syrup in an airtight container in the fridge. Done! You can also check out honey simple syrup for an alternative recipe using honey.
How to make a Watermelon Mojito
Muddle
Divide the lime wedges in between 2 highball glasses, as well as the mint leaves. Use a muddler until the limes and leaves are broken down well. Divide the syrup and watermelon between both cups and muddle again.
Enjoy
Divide the rum between both glasses, then pour in the club soda. Stir and enjoy!

Watermelon Mojito

Ingredients
1Large lime,cut into 8 segments20Mint leaves2ozSimple syrup(or to taste) *1/2CupWatermelon,diced3OzWhite rum1-1/2CupsClub soda(depending how big your glasses are)Ice,For servings
Instructions
Divide the lime chunks and mint leaves between two highball glasses. Use a muddler to muddle until the limes and mint break down and are juicy.
Divide the syrup and watermelon between both cups and muddle again.
Divide the rum between both cups, followed by the club soda and a few ice cubes.
Stir and SIP!
Notes
*To make simple syrup just combine 1/2 cup sugar and 1/2 cup water in a small saucepan over medium heat. Once the sugar is dissolved remove from the heat and cool. Store in an airtight container in the fridge.
