One of the most versatile AND delicious foods I love to bake in my kitchen are MUFFINS. Blackberry muffins, healthy oat bran muffins, gluten free paleo lemon poppyseed muffins– I WANT THEM ALL. Muffins are fabulous because they’re delicious, sweet and satisfying to eat and they can be a snack OR a tasty breakfast. Today’s applesauce muffin recipe is going to knock your socks off because they’re super scrumptious, perfectly moist (sorry but I’m speaking the truth!), and made with better-for-you ingredients that you’ll feel good about feeding your family. 

The Secret to Moist Cinnamon Applesauce Muffins

Now, while I absolutely love making and enjoying muffins, something that I don’t love is a dry muffin. Am I right or am I right? The secret to keeping these tasty muffins moist is none other than applesauce! It’s the star of this recipe as it adds subtle sweetness, nutritional value, and tender, moist texture to your batch of muffins.

Ingredients Needed

Now that your belly’s growling and you are seriously craving some healthy applesauce muffins, let’s get going and round up all the items required to make a batch. Here’s what you will need:

All Purpose Flour (or gluten free 1:1 flour, or white whole wheat flour)CinnamonSaltBaking PowderBaking SodaGround GingerGround NutmegGround ClovesNorth Coast Organic ApplesauceSugarAvocado OilCoconut or Brown SugarEggsVanillaRaw Organic Cane Sugar

How to make Applesauce Muffins

Prepare

Fire up the oven to let it preheat, and grease a muffin pan generously. Set aside. 

Mix

In a medium bowl, add the flour, spices, salt, baking powder and baking soda and whisk to combine. In a large bowl, add all remaining ingredients, leaving out the raw sugar for later. Add the dry ingredients to the wet ingredients and stir until JUST combined. 

Bake

Scoop the muffin batter into the muffin pan and sprinkle the raw sugar evenly onto each muffin. Pop it in the oven and bake for a bit, then reduce the heat and continue baking until a toothpick comes out clean and the muffins are lightly golden brown. 

DEVOUR

Let the muffins cool for a bit in the pan, then transfer them to a wire rack to cool completely. Enjoy!

Recipe Variations

If you want to boost your muffins a bit, I suggest throwing in some extra bits to make them even better! Toss in a handful or two of chocolate chips if you’d like, or some dried fruit such as raisins, cranberries or blueberries. If you like a bit of added crunch to the texture of your muffins, chop up some walnuts or pecans and toss them into the batter. Mixing the raw sugar with some cinnamon and sprinkling it on top of the muffins before baking would also be a nice touch!

Muffin Storage

These tasty muffins are great for SO many reasons, one of them being that they store super well! Place them in an airtight container in the fridge and they will last about 5 days. If you want to freeze them, they will last even longer! Simply store them in an airtight container or a freezer style ziploc bag and toss them in the freezer for up to 3 months.

Why are my Muffins Flat?The trick to perfectly domed muffins is the temperature switch during the baking process. Don’t skip this important step! I also suggest using a cookie scoop when placing the batter in the muffin tin cavities.

Can I replace all the oil for Applesauce?Technically, this would be possible, but I do not recommend it as the muffins will be much less flavorful this way.

Can I use Gluten Free Flour?I do think that gluten free flour would work wonderfully in this recipe, however I have not tried it myself. If you do, let me know how it goes!

Ingredients

2CupsAll purpose flour (250g)(or GF 1:1 or white whole wheat flour)2tspCinnamon1tspSalt1tspBaking powder1/2tspBaking soda1/2tspGround ginger1/4tspGround nutmeg1/4tspGround cloves1 1/2CupsNorth Coast Organic Applesauce1/2CupSugar1/4CupAvocado oil(or any neutral flavored oil)1/4CupCoconut or brown sugar2Eggs1tspVanilla1TbspRaw organic cane sugar

Instructions

Heat oven to 400 degrees and grease a muffin pan

In a medium bowl, whisk the flour, spices, salt, baking powder and baking soda.

In a separate, large bowl whisk all the remaining ingredients except the raw sugar.

Add the dry ingredients into the wet and stir until just combined.

Scoop into the muffin pan (I like using an ice cream scoop) and sprinkle with the raw sugar.

Bake for 5 minutes. Then, reduce the heat to 350 degrees and bake another 13-15 minutes, or until a toothpick inserted in the center comes out clean.

Let cool in the pan for 10 minutes and then transfer to a wire rack to cool completely.
